From this 19th session onward, the newly established nonprofit organisation <strong data-start=\"378\" data-end=\"411\">Washoku Oceania Network (WON)<\/strong> has taken over as host.<\/p>\n<p data-start=\"439\" data-end=\"731\">With the cooperation of <strong data-start=\"463\" data-end=\"530\">Hideo Dekura, Japanese Cuisine Goodwill Ambassador to Australia<\/strong>, this was the very first roundtable hosted under the new NPO. The weather was fine on the day, and many participants gathered even before the 3:00 p.m. start, setting a warm and friendly atmosphere.<\/p>\n<p data-start=\"733\" data-end=\"980\">The moderator was <strong data-start=\"751\" data-end=\"768\">Yuri Tazunoki<\/strong>, former representative of Washoku Lovers and now Vice Representative of WON, who has served as MC since the very first session. She smoothly guided the program while also introducing the newly established NPO.<\/p>\n<p data-start=\"982\" data-end=\"1363\">Participants included chefs and professionals active on the front lines of the food and beverage industry. His past presentations were:<\/p>\n<ul data-start=\"1520\" data-end=\"1838\">\n<li data-start=\"1520\" data-end=\"1673\">\n<p data-start=\"1522\" data-end=\"1673\"><strong data-start=\"1522\" data-end=\"1545\">1st Session (2020):<\/strong> Demonstration and philosophy of cuisine, featuring <em data-start=\"1597\" data-end=\"1610\">Tai Chazuke<\/em>, based on his experience at the renowned restaurant <em data-start=\"1663\" data-end=\"1670\">Kicho<\/em>.<\/p>\n<\/li>\n<li data-start=\"1674\" data-end=\"1838\">\n<p data-start=\"1676\" data-end=\"1838\"><strong data-start=\"1676\" data-end=\"1700\">14th Session (2024):<\/strong> A lecture on the history of Japanese cuisine and health-conscious meals, with modern adaptations of <em data-start=\"1801\" data-end=\"1816\">Ichiju Sansai<\/em> and <em data-start=\"1821\" data-end=\"1835\">Shojin Ryori<\/em>.<\/p>\n<\/li>\n<\/ul>\n<p data-start=\"1840\" data-end=\"1908\">For this 19th session\u2014the first under the new NPO\u2014the themes were:<\/p>\n<ul data-start=\"1910\" data-end=\"2064\">\n<li data-start=\"1910\" data-end=\"2000\">\n<p data-start=\"1912\" data-end=\"2000\"><em data-start=\"1912\" data-end=\"1998\">\u201cExperiencing the World of Wa through Visual Presentation and Flavor Transformation\u201d<\/em><\/p>\n<\/li>\n<li data-start=\"2001\" data-end=\"2064\">\n<p data-start=\"2003\" data-end=\"2064\"><em data-start=\"2003\" data-end=\"2062\">\u201cSavoring the Seasonality of Japan through Art and Taste\u201d<\/em><\/p>\n<\/li>\n<\/ul>\n<p data-start=\"2066\" data-end=\"2108\">A truly unique and experimental program.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-256\" src=\"http:\/\/washoku-oceania-network.com\/wp-content\/uploads\/2025\/09\/IMG_2733-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/washoku-oceania-network.com\/wp-content\/uploads\/2025\/09\/IMG_2733-300x225.jpg 300w, https:\/\/washoku-oceania-network.com\/wp-content\/uploads\/2025\/09\/IMG_2733-1024x768.jpg 1024w, https:\/\/washoku-oceania-network.com\/wp-content\/uploads\/2025\/09\/IMG_2733-768x576.jpg 768w, https:\/\/washoku-oceania-network.com\/wp-content\/uploads\/2025\/09\/IMG_2733-1536x1152.jpg 1536w, https:\/\/washoku-oceania-network.com\/wp-content\/uploads\/2025\/09\/IMG_2733-2048x1536.jpg 2048w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<p>&nbsp;<\/p>\n<h2>Part 1: Painting Seasonal Landscapes with Ingredients<\/h2>\n<p data-start=\"2173\" data-end=\"2334\">The first session showcased the challenge: <em data-start=\"2216\" data-end=\"2332\">\u201cHow far can we express the Japanese world using only plain white plates, without traditional Japanese tableware?\u201d<\/em><\/p>\n<p data-start=\"2336\" data-end=\"2562\">Since authentic Japanese ceramics such as Oribe or Bizen ware, or traditional motifs like <em data-start=\"2426\" data-end=\"2436\">karakusa<\/em>, <em data-start=\"2438\" data-end=\"2446\">sansui<\/em>, or <em data-start=\"2451\" data-end=\"2464\">Tatsutagawa<\/em> patterns are difficult and costly to obtain overseas, alternative approaches were demonstrated.<\/p>\n<p data-start=\"2564\" data-end=\"2844\">Natural ingredients such as matcha, beetroot, and blackberries were treated like \u201cpaints\u201d to depict landscapes of cherry blossoms or bamboo on plates. The resulting dishes resembled paintings, and participants joined in to experience the depth of food-based artistic expression.<\/p>\n<p data-start=\"2846\" data-end=\"2975\">The matcha used was provided by <strong data-start=\"2878\" data-end=\"2895\">Simply Native<\/strong>, and its vivid color, aroma, and fine texture drew admiration from attendees.<\/p>\n<p data-start=\"2977\" data-end=\"3382\">A special technique was also presented: creating designs that look like brushstrokes on white porcelain. The key lay in controlling <em data-start=\"3109\" data-end=\"3124\">concentration<\/em>, an idea inspired by molecular gastronomy. Foods like lemon, lime, and grapefruit suddenly tasted remarkably sweet\u2014like a magic trick.<\/p>\n<p data-start=\"3865\" data-end=\"4075\">A variety of items were prepared: lemons, limes, green apples, kiwis, grapefruits, cherry tomatoes, and kumquats. Malic and citric acids were included to maximize the taste transformation experience.<\/p>\n<p>Using diagrams, Mr. Kawano also explained the molecular mechanism: how miraculin binds to sweet receptors, altering the perception of sourness into sweetness.
